The Disappointing Experience of a Mushy Watermelon

There's a unique disappointment to cutting open a watermelon you've been looking forward to, only to find the flesh is soft, mealy, or spongy instead of crisp and juicy. It looks fine from the outside — green, firm, heavy — but the inside has broken down into an unappealing mush. What went wrong, and is it safe to eat?

The answer depends on what caused the mushiness. There are several distinct conditions that can turn watermelon flesh soft, and they have different causes, different safety implications, and different fixes.

Cause 1: Hollow Heart

The most common non-rot cause of a mushy or spongy watermelon interior is a condition called hollow heart (also known as hollow core). This is a growth disorder, not a disease, and it develops while the melon is still on the vine.

In hollow heart, the internal flesh of the watermelon splits apart, creating cracks and gaps (often star-shaped or irregular) through the centre of the melon. The tissue around the cracks can become soft, spongy, and mealy — the "mush" you encounter when cutting. The outside of the melon looks completely normal; you can't detect hollow heart without cutting the watermelon open.

Hollow heart is caused by inconsistent pollination. Watermelon fruit develops from fertilised ovules, and if some ovules aren't fertilised (because of poor pollinator activity, cold weather during flowering, or other stress), the fruit grows unevenly. The tissue in under-fertilised areas doesn't develop properly, leaving gaps and spongy areas.

Other contributing factors include:

  • Rapid growth spurts after periods of slow growth (often from inconsistent watering)
  • Cold snaps during early fruit development
  • Certain varieties being more prone to the condition
  • Low bee activity during the flowering period

Is hollow heart safe to eat? Yes. The spongy or mealy tissue is not rotten or contaminated — it's just structurally imperfect. You can eat it, though the texture won't be great. Cut away the spongy parts and enjoy the firmer flesh.

Cause 2: Over-Ripening

Watermelon continues to soften after harvest, though it doesn't ripen further (it doesn't get sweeter — see our melon ripening guide). If a watermelon is left too long before cutting, or stored in warm conditions, the flesh breaks down enzymatically and becomes soft and mushy throughout.

Over-ripe watermelon is safe to eat as long as it hasn't started to ferment or grow mould. The texture will be soft and mealy rather than crisp, and the flavour may be less fresh. It's still fine for smoothies or juicing if the texture isn't pleasant for eating. See our watermelon portion guide.

To avoid over-ripening, buy watermelons that are ripe but not over-ripe (see the selection tips below), and eat them within a week of purchase. Cut watermelon should be refrigerated and eaten within 3-4 days.

Cause 3: Poor Storage and Temperature Damage

Watermelons are sensitive to temperature. If they're stored too cold (below about 10°C for extended periods) or experience temperature fluctuations, the flesh can break down and become mealy. This is called chilling injury, and it's a particular risk if you store a whole watermelon in the refrigerator for too long before cutting it.

Whole, uncut watermelons should be stored at room temperature (around 15-20°C is ideal) until you cut them. Once cut, the flesh should be refrigerated and covered. Cause 4: Bacterial Soft Rot and Fungal Decay

This is the dangerous one. Watermelons can be infected by bacteria (particularly Erwinia and Pseudomonas species) or fungi that break down the flesh from the inside or through wounds in the rind. The result is soft, wet, sometimes slimy flesh that may smell sour, fermented, or unpleasant.

Bacterial soft rot can enter the melon through:

  • Cuts or bruises in the rind from handling
  • The stem end if it's been damaged
  • Cracks that develop during growth (including hollow heart cracks, which can provide entry points for bacteria)

Is soft rot safe to eat? No. If the flesh is slimy, smells fermented or sour, or has visible mould, the watermelon is spoiled and should be discarded. How to Tell the Difference

When you cut open a mushy watermelon, here's how to assess whether it's safe:

  • Hollow heart (safe): Dry cracks or gaps in the flesh, spongy but not wet tissue, no unusual smell. The flesh may be slightly mealy around the cracks but doesn't smell off.
  • Over-ripening (safe): Soft, mealy flesh throughout, but no slime, no mould, and no unusual smell. The colour may be slightly dull but not grey or brown.
  • Chilling injury (safe): Mealy, water-soaked flesh, often throughout the melon. No slime or mould. The texture is poor but the flesh doesn't smell bad.
  • Bacterial/fungal rot (unsafe): Wet, slimy, or oozing flesh. Sour, fermented, or unpleasant smell. Visible mould (fuzzy patches, often white, grey, or pink). Grey, brown, or discoloured flesh. If any of these signs are present, discard the entire melon.

When in doubt, throw it out. Watermelon is inexpensive enough that it's not worth risking food poisoning.

How to Avoid Buying a Mushy Watermelon

While you can't detect hollow heart from the outside, you can reduce your chances of getting a bad melon by following good selection practices:

  • Pick it up — it should feel heavy for its size. A heavy watermelon is a juicy watermelon. A light one may be dry or over-ripe.
  • Look for the field spot. The spot where the melon sat on the ground should be creamy yellow, not white or pale. A yellow field spot means the melon ripened on the vine. A white spot means it was picked too early.
  • Check the webbing. The brown, rough, web-like lines on the rind are scars from bee pollination. More webbing often means more pollination, which can mean sweeter fruit.
  • Give it a tap. A ripe watermelon should produce a deep, hollow sound when tapped (like a knock on a door). A dull, flat sound means the melon is over-ripe or mushy. See our watermelon sound guide.
  • Check for damage. Avoid melons with cuts, bruises, soft spots, or a damaged stem end — these are entry points for bacteria.
  • Choose the right shape. Round or oval melons are generally sweeter than long, elongated ones. This is a guideline, not a rule.

Can You Salvage a Mushy Watermelon?

If the watermelon has hollow heart or is slightly over-ripe but otherwise safe, you can still use it:

  • Blend it into a smoothie. Texture doesn't matter when it's blended. See our smoothie guide.
  • Make watermelon juice. Blend and strain for fresh watermelon juice.
  • Freeze it. Cut into cubes and freeze for later use in drinks or smoothies.
  • Make a watermelon granita or sorbet. The soft texture is actually an advantage for these.
  • Use in a salad. If the texture is only slightly soft, use it in a watermelon-and-feta salad where the other ingredients provide the crunch.

Do not try to salvage a watermelon with signs of rot (slime, mould, or sour smell). These are not safe to eat in any form.
