"Seed oils are toxic." "Vegetable oil causes inflammation." These claims are everywhere on social media — but how much of it is backed by actual evidence? The truth is more nuanced than either camp admits.
What Are Vegetable Oils?
The term "vegetable oil" covers a wide range of products: canola oil, sunflower oil, soybean oil, corn oil, cottonseed oil, and more. These are extracted from seeds and plants using industrial pressing or chemical solvents, then refined for colour, odour, and stability. They're distinct from traditional oils like olive oil, coconut oil, and avocado oil, which are typically cold-pressed with less processing.
The Omega-6 Problem
The main nutritional concern with most vegetable oils is their very high content of omega-6 polyunsaturated fatty acids (PUFAs), particularly linoleic acid. In isolation, omega-6 fats aren't inherently bad — but the modern Western diet already contains a highly imbalanced ratio of omega-6 to omega-3 fats, often as high as 20:1. Better Alternatives for Different Uses

Avocado oil, refined coconut oil, ghee, or even lard are more heat-stable choices. Extra virgin olive oil is also more stable than most vegetable oils despite its lower smoke point, due to its high antioxidant content.
For Cold Uses (dressings, dips)
Extra virgin olive oil is the gold standard for cold applications — high in monounsaturated fats and polyphenol antioxidants that are protective rather than inflammatory.
For Baking
Cold-pressed avocado or coconut oil works well and provides more stability than refined vegetable oils.
The Bottom Line
Vegetable oils used occasionally and at appropriate temperatures are unlikely to cause harm. The real concern is the sheer volume consumed in processed foods, takeaway meals, and restaurant cooking, where these oils are often repeatedly heated. If you're cooking at home, choosing more stable fats like olive oil, avocado oil, or butter for everyday use is a reasonable evidence-based decision.
