Most people assume oil is a pantry staple that lasts forever. The reality is that vegetable oil absolutely can go off — a process called rancidification — and consuming rancid oil regularly may not be great for your health. Here's everything you need to know.

Does Vegetable Oil Actually Expire?

Yes. Vegetable oils contain polyunsaturated and monounsaturated fatty acids that oxidise when exposed to air, heat, or light. This oxidation breaks down the oil's structure, producing unpleasant compounds called aldehydes and ketones — the source of that characteristic "off" smell in old oil.

Most vegetable oils have a printed best-before date of 1–2 years from manufacture. However, once opened, the shelf life drops considerably — typically to 6–12 months depending on storage conditions.

How to Tell if Vegetable Oil Has Gone Off

Smell

This is the most reliable test. Fresh vegetable oil has a very mild, neutral odour. Rancid oil smells distinctly sour, musty, crayon-like, or like old paint. If you notice any of these smells when opening the bottle, the oil should be discarded.

Taste

Rancid oil often becomes thicker or stickier than fresh oil. If it coats the inside of the bottle unusually, this is a warning sign.

Rancid oil won't cause immediate food poisoning the way bad meat might, but it's not something you want to consume regularly. Rancid fats produce free radicals during oxidation, which are associated with inflammation and cellular damage over time. The best approach is to discard oil that smells or tastes off.

  • Flaxseed oil — extremely prone to rancidity, 3–6 months even refrigerated
  • Sunflower oil — moderate, 6–12 months after opening
  • Canola oil — moderate, 6–12 months after opening
  • Olive oil — more stable, 12–18 months if stored well
  • Coconut oil — most stable of common oils, up to 2 years

How to Store Vegetable Oil to Maximise Shelf Life

  • Store in a cool, dark cupboard away from the stove
  • Keep the lid tightly sealed — air is the enemy
  • Buy in smaller bottles if you don't use much — bulk sizes often go rancid before they're finished
  • Refrigerate oils like flaxseed, hemp, or walnut that are especially high in polyunsaturated fats
  • Avoid storing oil next to the oven or in a warm pantry

Can You Use Oil Past Its Best-Before Date?

If the oil is sealed and was stored well, it may still be fine for some time after the best-before date. Always smell and taste a small amount before using. The best-before date is an indicator of peak quality, not a safety cut-off — but trust your senses first.
