Why Does Milk Curdle When You Add Lemon Juice?
Milk curdles when you add lemon juice because the acid in the lemon lowers the pH of the milk below the point where its proteins stay dissolved. Milk contains a protein called casein, which normally floats around in tiny clusters called micelles, kept stable by a slight negative charge on their surface. When you add acid, you neutralise that charge, the micelles clump together, and the milk separates into solid curds and liquid whey. It is the same process that makes orange juice taste sharp and that gives red cabbage its colour shift — acid changes how molecules behave.
This is not a sign that the milk has gone bad. When milk sours on its own in the fridge, that is bacteria producing lactic acid, which curdles the milk over time. When you add lemon juice, you are doing the same thing but instantly and deliberately. The result is a food, not a waste product — paneer, ricotta, and lemon-curdled milk are all made this way on purpose.
The Protein Chemistry
Milk protein is about 80% casein and 20% whey. Casein is the one that curdles. Each casein molecule is a long chain folded into a sphere, and a cluster of these spheres forms a micelle. The micelles are kept apart by a layer of negatively charged kappa-casein on their surface — the charges repel each other, like trying to push two magnets together the wrong way. This keeps the micelles dispersed throughout the milk.
When you add acid, you introduce hydrogen ions (protons). These positive ions neutralise the negative charges on the kappa-casein. Without that repulsion, the micelles no longer push each other apart. They start sticking together, forming larger and larger clumps. These clumps are the curds. The liquid they leave behind, which is mostly water with dissolved whey proteins, minerals, and lactose, is the whey.
The pH at which this happens is called the isoelectric point of casein, which is around pH 4.6. Normal milk is about pH 6.7. Lemon juice is about pH 2. Add enough lemon juice and you push the milk below 4.6, and the curdling begins. Vinegar (pH 2.5), lime juice (pH 2), and cream of tartar all do the same thing.
Heat Makes It Happen Faster
Acid alone will curdle cold milk eventually, but heat dramatically speeds up the process. This is why most recipes for homemade ricotta or paneer start by warming the milk. Warm milk proteins are more mobile and more reactive, so the casein micelles clump together faster and form larger, more coherent curds. Cold milk with lemon juice will separate slowly and make smaller, less distinct curds. Hot milk (just below a simmer, around 80–90°C) with lemon juice will separate in seconds and make firm, scoopable curds.
This is also why you sometimes accidentally curdle milk when making a sauce. If you add lemon juice or wine to a milk-based sauce that is hot, the heat accelerates the curdling and you get lumps. The fix is usually to add the acid slowly, stir constantly, and keep the temperature moderate. A small amount of starch (like a roux) also helps stabilise the proteins and prevents clumping.
How to Make Fresh Ricotta at Home
Once you understand the chemistry, making fresh ricotta at home is trivially easy. Pour 2 litres of whole milk into a pot. Heat it slowly to about 90°C — just below a simmer, with small bubbles forming at the edges. Take it off the heat. Add 1/4 cup of lemon juice (or white vinegar) and stir gently. Within seconds, the milk will separate into white curds and greenish-clear whey. Let it sit for 10 minutes, then scoop the curds into a cheesecloth-lined strainer and let it drain for 15–30 minutes depending on how firm you want it.
The result is fresh, warm ricotta that tastes nothing like the supermarket version. You can do the same thing to make paneer — just press the curds harder and for longer. Curdling vs Spoilage
There is a critical difference between deliberate curdling with acid and the curdling that happens when milk goes off. When milk spoils, bacteria (usually Lactobacillus) eat the lactose in the milk and produce lactic acid as a waste product. Over time, the lactic acid builds up, the pH drops, and the casein curdles. The end result looks similar to lemon-curdled milk, but the bacteria have also produced other compounds — some of which can be harmful.
The rule is: if you added the acid yourself and the milk was fresh, the curds are safe to eat. If the milk curdled on its own and smells sour or off, the bacteria responsible may not be safe. The smell test is usually enough — fresh lemon-curdled milk smells clean and lemony. Spoiled milk smells sharp, rancid, or bitter. If in doubt, throw it out. Why Some Cheeses Use Rennet Instead of Acid
Acid curdling gives you soft, fresh cheeses like ricotta, paneer, and queso fresco. For harder cheeses like cheddar, mozzarella, and gouda, cheesemakers use rennet — an enzyme that cuts the kappa-casein on the surface of the micelles rather than neutralising its charge. The result is a different kind of curd: firmer, more elastic, and capable of being stretched (which is how mozzarella gets its texture). Acid curds are fragile and crumbly. Rennet curds are flexible and stretchy.
This is why you cannot make mozzarella with just lemon juice — the acid gives you a ricotta-like texture, not a stretchy one. You need rennet for the stretch. Ricotta, on the other hand, can be made with just acid and heat. The two methods produce fundamentally different textures from the same starting milk.
Curdled Milk in Cooking
Understanding why milk curdles helps you avoid or achieve it in cooking. If you want to avoid curdling — say, when making a cream sauce with wine — add the acid slowly, keep the temperature moderate, and consider a small amount of starch to stabilise the proteins. If you want curdling — when making paneer, ricotta, or lemon-curdled milk for baking — use full-fat milk, heat it to just below a simmer, and add enough acid to drop the pH to 4.6 or below.
Australian milk from Coles or Woolworths works fine for homemade ricotta. Full-fat milk gives the best texture and yield. Skim milk works but produces less curd and a drier result.
