Australia's Short Asparagus Window
Asparagus has one of the most tightly defined seasons of any Australian vegetable. Peak season runs from September to November — roughly 6–8 weeks when the spears emerge from the ground after winter dormancy. Outside this window, asparagus is imported (mainly from Peru and Mexico) and is noticeably less fresh, less sweet, and significantly more expensive.
The Riverina in NSW and parts of Victoria are Australia's major asparagus-growing regions. Local asparagus from these areas during October is among the finest produce you can buy.
Why Asparagus Goes Woody So Fast
Asparagus converts its sugars to tough fibre (lignan) rapidly after harvest — sometimes within 24–48 hours at room temperature. This is why old asparagus has that unpleasant woody, stringy texture at the base. The fresher, the better — always.
How to Pick Fresh Asparagus
- Tips: Tightly closed, compact, and dry. Open or feathery tips mean it's past peak.
- Stems: Should be firm and straight, not bendy or floppy.
- Cut end: Fresh-looking and moist, not dried out or split. Press your fingernail in — it should feel juicy.
- Colour: Vivid green from tip to cut end. Pale, yellowish lower stems mean older.
- Smell: Fresh, grassy, faintly sweet. No smell usually means old.
Thin vs Thick Spears
Contrary to popular belief, thick spears are not tougher — they come from older, more established crowns and can actually be more tender. Thin spears cook faster and are better for quick sautéing or raw preparation. Both are equally good; choose based on your cooking method.
Storage
Treat asparagus like cut flowers: trim the ends and stand upright in a glass with 2–3cm of cold water in the fridge, loosely covered with a plastic bag. This keeps them fresh for up to 4–5 days. Lying flat in the fridge, they lose quality within 1–2 days.
Nutrition
Asparagus is exceptionally rich in folate (critical during pregnancy), vitamin K, vitamin C, and contains inulin — a prebiotic fibre that feeds beneficial gut bacteria. It's also one of the few vegetable sources of glutathione, a powerful antioxidant.
